Omelet Crepes with Spinach Cream Cheese Filling


Ingredients

1 cup frozen spinach (thawed)
1/4 cup fresh mushrooms, chopped
3 tbsp cream cheese, softened
1 tbsp butter
1 tsp chopped garlic
1 tsp shallot, chopped
2 eggs
1 tbsp potato starch flour
1 tbsp vegetable oil
1 tbsp water
1 tsp salt
Truffle oil


Directions
  1. Beat eggs, potato starch flour, salt, and water in a bowl.
  2. Melt butter on medium/high heat in a large saute pan - add garlic, shallots, spinach, and mushrooms to pan. Saute for about 10 minutes.
  3. Add to softened cream cheese in a small bowl and mix. Set aside.
  4. Coat a medium sized omelet pan in oil and put over medium high heat.
  5. Once heated, add egg mixture to pan. Using a rubber spatula, lift all edges as it cooks through and carefully flip.
  6. Place Omelet crepe on plat and spoon spinach mixture onto one side. Roll crepe and slice in half. Optional: Drizzle truffle oil over top.

Orichette with Sausage


Ingredients

2 links of italian sausage (I used a turkey version)
1 can peeled tomatoes, drained and chopped
3 tbsp butter
handful baby spinach
1 onion, chopped
1 garlic clove, crushed
1 lb or so of dried orecchiette
1 tbsp olive oil
salt and pepper
frshly grated parmasean cheese, to serve
1 egg (per plate)


Directions
  1. Melt the butter in a deep skillet on med high, with a little olive oil. Remove the casing from the sausage and brown the sausage and crumble in the pan. Add onion and garlic and cook until translucent, about 5-7 mins.
  2. Meanwhile, boil the water for the pasta, and cook to package instructions. Mine took 12 mins.
  3. Add tomatoes, spinach to pan and season with salt and pepper to taste.
  4. When pasta is done, drain and add to pan. Mix well and serve. Sprinkle with grated cheese and top wth a sunny side up egg (I cooked the in the same pan after I emptied it of the pasta and sauce mixture so it would collect all the flavors.)
